Alaskan King Crab Salad

We tried two variations of Alaskan king crab salad over the weekend. The first version was very simple: a pretty heavy sampling of Alaskan king crab, some cut-up marinated artichoke hearts, some crumbled Gorgonzolla cheese, an avocado, a little bit of chopped Roma tomato and a little chopped iceburg lettuce. The Alaskan king crab, the cheese and the artichoke hearts have such strong flavors that I ate it without dressing and really liked it.
The next day we tried a variation on the same salad. We had all of the previous ingredients and added kalamata olives. It was part of a bigger Valentines Day meal and was good, but not as good as the day before.

Alaskan king crab has so much flavor that it really makes a wonderful ingredient to a salad. A little bit of Italian dressing was a nice addition for a variation on the flavor.
